Manne, gee bietjie voorstelle vir bogenoemde asb, wat maak julle met die vleis? Al is dit eenvoudige voorstelle.

Wie sal julle voorstel vir verwerking in Pretoria oos area?

Vat dit kings meat deli toe. Ons het so ruk terug die sondag amper 700kg se karkaste ingegee, en dit die volgende saterdag verwerk, gedroog en verpak terug gekry.

Moes ‘n boks nartjies die maandag inwerk om te help met al die biltong wat geeet was… Het lanklaas sulke lekker droewors, biltong, cabanossie en salamie geeet.

Tarentaal kook jy in 'n swart pot saam met 2 hoenders en maak 'n pie... Loop soos 'n jet!

OPi plaas het my ouma hom altyd ini oond gemaak. Daai was baie jare gelede. Lyk my min mense hou van n gespikkelde wilde hoender.

Hier by ons in Frankryk is dit 'n baie gewilde dis. Dit kos vrek duur en daar is baie mense wat daarmee boer... Ek sal bietjie kyk vir 'n paar resepte en dit vertaal en dit opsit.

Ek het tarentaal op verskeie maniere probeer gaarmaak en die enigste manier wat ek geniet het was om dit soos hierbo genoem saam n hoender of twee in n pot gaar te maak en n pie te maak.

Netnou so bietjie gekyk - hulle sê om te probeer om tarentale jonger as 16 weke te probeer kry - as jy hulle wild skiet dan weet jy niks van hoe oud hulle is nie...

Tarentaal as 'n kasserol gereg in die oond werk uitstekend, veral met lemoensap of appelkoossap.

I really enjoy guinea fowl. An old guinea fowl has blue/green and red colours on it's head and the "horn" is fully developed. A young guinea fowl only has grey on its head and the "horn" is only partially developed.

I skin my guinea-fowls. The skin does not add much to a guinea-fowl dish, in my opinion. The skin of francolin and spurfowl goes golden when cooked. The skin of a guinea-fowl is a purple-grey colour and does not look appetising.

Remove the guts as soon as you shoot the bird. The pellets often rupture the intestines and all the juices escape into the abdominal cavity. If you wait until the end of the day to gut your bird it will have marinated in those juices the whole day and there will be an unappetising smell that does not wash away.

Old guineas are very tough. They lend themselves to casserole/stew-type dishes slow cooked for 4-6 hours. Think of making a chicken casserole with a thick tomato gravy. Now make it with guinea-fowl. Your favourite chicken in wine recipe - make it with guinea-fowl. Your chicken curry recipe will work great with guinea-fowl. Just remember the much longer cooking time. As others have mentioned, it will also make a great pie especially when mixed with chicken. I have made guinea-fowl soup using chicken soup recipes and it was great.

I also make a "hunters soup" on the farm. I brown some beef shin, game shin/neck, and a guinea-fowl cut into 10-12 pieces in a large poitjie pot. Season with salt & pepper. I throw in onions, celery and garlic to brown as well. In go the chopped veggies: carrots, leaks, turnips, butternut, potato, can of chopped tomato together with parsley and thyme. Shot of vinegar and worcestershire sauce. Cover with water / stock and let it simmer for 3 hours. Add a handful or two of barley and let it simmer for a further hour. Add a handful or two of lentils and rice. Sometimes I also throw in some pasta as well. Let it simmer for another 45 minutes. Serve with crispy breadrolls or fresh bread. Sooo nice to enjoy next to the fire on a cold winter's night.

The young guineas you can cook using any of the above methods but your cooking time will be the same as for chicken i.e. 1.5-2 hours. I like to season the young ones with salt, pepper and paprika; fry them in garlic butter; sprinkle with oregano and add lemon juice at the end. If you like, deglaze the pan with some chicken stock and thicken with bisto to make a gravy for your fried baby guinea.

I would not recommend cooking guinea-fowl on the braai as it will be tough and dry.

Smaak verskil mos maar.
Die polisie hoenders en modderbokke los ek maar vir die plaas volk.
Ek kon dit nog nooit lekker gaar maak of gebruik sonder om dit vrek te meng met ander vleis nie.

Joe, jou opsies is legio... Tarentaal werk lekker as kastrol gereg of saggekook en in 'n pastei. Dieselfde met rooibok en BWB. Ek maak lankal nie meer net droeëwors en biltong nie en maak deesdae baie patties en sosaties en ook dun braaiwors. Die dun worsies is lekker vir ontbyt of so proehappie voor mens die regte vleis braai. Of sommer vir in die skottelbraai langs die veld as die kids sport het. Maalvleis is ook altyd handig vir 'n pastei of frikkadele of soortgelyk en maak ook 'n bitter lekker kerrie-en-rys.

As mens al die koste in berekening bring, sal dit jou nooit goedkoper uitwerk om te gaan jag nie, maar ons doen dit mos vir die lekker en nie vir die ekonomiese "voordeel" nie. Om egter net elke keer droeëwors en biltong te maak, voel vir my al soos mors en ek maak deesdae meer tafelvleis en wors en koop lekker vetbees biltong as ek lus raak vir biltong...

Ek het een aand n modderbok ribbetjie probeer braai in die weber. Nie eers die hond wou dit eet nie....

Modderbok maak heerlike kaaswors en cabbernossie!

Tarentaal het ek al saam met 'n kolgans en wildemakou in die swartpot fyn gekook - speserye ingegooi met varkspek en toe pasteie gemaak. My gaste was mal oor die heerlike wildspastei!

Rooibok nog net eenkeer kon jag en ek dink die vleis is beter as springbok.

Ek ondersteun Eugene hierbo heelhartig - wildsvleis is vir die tafel in vele vorme en jy kan verder daarmee kom as om biltond en droe wors te maak en aan jou pelle uit te deel, want jy is mos 'n JAGTER! >:D

Ek koop silverside of topside en maak beesbiltong.

Ek Kan nie kommemtaar lewer op die tarentaal nie.

Met die bokke laat maak ek: Hamburger patties, kaas patties, boerewors, kaas en uie boerewors, sosatie boerewors, maelveis, gerookte kaaswors dun en Duk, sosaties, frikkedelle, salami.

Vlakvark: gerookte kaaswors, salamie cabernosi.

Op die stadium gebruik ek Bluegum amderkant Bapsfontein.

Ek maak ook deesdae meer tafel vleis as droewors en biltong. Ek doen gewoonlik patties, braaiwors, sosaties en hou die fillets heel. Die familie geniet die gesonder opsie en omtrent 80% van ons vleis in die huis is wild.

Ek was vroeer die jaar bevoorreg om n jong modderbok om te dop en gerookte kaaswors, salami en cabanossi’s gemaak. Dis heerlik en geniet dit baie... soos gewoonlik maak ek meer as wat ons op een slag kan gebruik. Hoe maak julle manne om julle salami en cabanossi’s te stoor?
